(Sheet Pan) Sausage Dinner

If you can’t tell, I love all things Fall. From the weather, to the changing colors, and of course, all of the recipes. Hearty soups and stews to sweet pumpkin and apple dishes, I’m about as basic as they come. And I’m not ashamed to admit it.

My palette quickly changes from light Summer meals to warm and cozy dishes, like this crazy easy Sheet Pan Sausage Dinner. I actually doubled the recipe below and we didn’t have a bowls worth leftover. All of the littles absolutely chowed and let’s just say that lately I’ve had trouble finding meals all seven of us agree on. But not the case here!

This is also a great recipe to use up any vegetables you have lying around. Just keep in mind that root vegetables (e.g., carrots and potatoes) will need a little longer to cook, so cut them smaller and put them in the oven for about 10 minutes before everything else. I may or may not have also sliced up a few cheddar hot dogs leftover and no one was the wiser.

Ingredients
  

  • 1 (12 oz.) precooked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 yellow bell pepper, diced into bite sized pieces
  • 1 zucchini, diced into bite sized pieces
  • 1 c. cherry tomatoes
  • 3 tbsp. olive oil
  • 1 tbsp. dried onion flakes
  • 1 tbsp. smoked paprika
  • 1 tbsp. dried parsley
  • 1 tbsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • Grated parmesan, for garnish (optional)

Instructions
 

  • Heat oven to 400ºF. Line baking sheet with aluminum foil. Add sausage, yellow pepper, zucchini, and tomatoes. Drizzle evenly with olive oil.
  • Sprinkle with onion flakes, paprika, parsley, oregano, salt, and pepper. Toss to evenly coat sausage and vegetables. Flatten into an even layer.
  • Bake 45 minutes or until vegetables are tender. Toss halfway through baking to ensure even cooking. Sprinkle with parmesan and serve immediately.

Notes

  • This recipe lends itself to many substitutions, like great beans, onion, asparagus, or carrots (just make sure to cook the carrots a bit beforehand).
  • I served this sheet pan dinner over rice, but a quick salad and dinner rolls or pasta would also be great!
