(Sheet Pan) Sausage Dinner

Ingredients
  

  • 1 (12 oz.) precooked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 yellow bell pepper, diced into bite sized pieces
  • 1 zucchini, diced into bite sized pieces
  • 1 c. cherry tomatoes
  • 3 tbsp. olive oil
  • 1 tbsp. dried onion flakes
  • 1 tbsp. smoked paprika
  • 1 tbsp. dried parsley
  • 1 tbsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • Grated parmesan, for garnish (optional)

Instructions
 

  • Heat oven to 400ºF. Line baking sheet with aluminum foil. Add sausage, yellow pepper, zucchini, and tomatoes. Drizzle evenly with olive oil.
  • Sprinkle with onion flakes, paprika, parsley, oregano, salt, and pepper. Toss to evenly coat sausage and vegetables. Flatten into an even layer.
  • Bake 45 minutes or until vegetables are tender. Toss halfway through baking to ensure even cooking. Sprinkle with parmesan and serve immediately.

Notes

  • This recipe lends itself to many substitutions, like great beans, onion, asparagus, or carrots (just make sure to cook the carrots a bit beforehand).
  • I served this sheet pan dinner over rice, but a quick salad and dinner rolls or pasta would also be great!
