Well the last few weeks have been a blur!
In a good way, of course. If you caught my travel post from a while back, you know that my fam traveled to Disneyland. Once we came back, unfortunately I was sick for the next couple of weeks with a sore throat and cough that I’m fairly certain I contracted from my toddler. But in between some naps (for me) and early bed times (also for me), we managed to sneak in all sorts of Halloween events for the kiddos. I’m a big Halloween lover but it’s hard to believe the “holiday” isn’t even here yet. Is it just me, or are there exponentially more Halloween activities every year? I literally can”t even keep up. But I’m not complaining, I still love it all.
This last weekend, my parents made their traditional trek to Chicago to celebrate an an early Halloween with their grand babies. We partook in a super fun Halloween party with our neighbors, ate too much, drank too much, and stayed up way too late watching the 18-inning World Series game. And of course, they got in all the snuggles with their favorite littles.
Then on Sunday morning, before my parents headed back to Minnesota, I made these pancakes. These fluffy little bits of sweet and savory heaven. I’ll admit, I was even surprised by how crazy good these seemingly simple pancakes turned out. The addition of apple and sausage is so easy yet impactful. And the hint of cinnamon just brings it all together.
So as we head in to the holiday months full of family, friends, and (all the) food, I had to get this recipe up. This is an easy breakfast you can double (or triple) and it’s sure to be a pleaser. With a touch of butter and maple syrup, you have the perfect start to your (holi-) days!
Sausage Apple Pancakes
Ingredients
- 1/2 lb. pork breakfast sausage links
- 1 c. all purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 3/4 c. whole milk
- 1 egg
- 1 tbsp. mayonnaise
- 2 tbsp. honey
- 1 apple, peeled, cored, and grated
- Butter and maple syrup, for serving
Instructions
- Cook sausage according to package directions. Cut into 1/2-inch pieces. Set aside until ready to use.
- In a large bowl, stir together flour, baking powder, baking soda, salt, and cinnamon.
- In a small bowl, beat together milk, egg, mayonnaise, and honey until combined. Add wet ingredients to dry and gently mix together. Add sausage and apples and gently stir.
- Heat a large pan or griddle on medium heat. Add 1/4 to 1/3 cup of batter to pan/griddle and cook until bubbles start to form on the sides (about 1 to 2 minutes) before flipping. Cook until bottom is lightly golden brown. Repeat with remaining batter until done.
- Serve immediately with butter and maple syrup.
Notes
- The original recipe listed either 1 tbsp. butter or mayonnaise for the pancake mix. Somehow I managed to use all of our butter over the weekend, so I had to use mayo. But as long as my hubby never finds out, I’ll be doing this from now on!
