The perfect mix of sweet apples and savory sausage brought together by a hint of cinnamon. A wonderfully easy breakfast recipe for the Fall and holiday seasons!
Cook sausage according to package directions. Cut into 1/2-inch pieces. Set aside until ready to use.
In a large bowl, stir together flour, baking powder, baking soda, salt, and cinnamon.
In a small bowl, beat together milk, egg, mayonnaise, and honey until combined. Add wet ingredients to dry and gently mix together. Add sausage and apples and gently stir.
Heat a large pan or griddle on medium heat. Add 1/4 to 1/3 cup of batter to pan/griddle and cook until bubbles start to form on the sides (about 1 to 2 minutes) before flipping. Cook until bottom is lightly golden brown. Repeat with remaining batter until done.
Serve immediately with butter and maple syrup.
Notes
The original recipe listed either 1 tbsp. butter or mayonnaise for the pancake mix. Somehow I managed to use all of our butter over the weekend, so I had to use mayo. But as long as my hubby never finds out, I'll be doing this from now on!
