Ingredients

  • 1/2 lb. pork breakfast sausage links
  • 1 c. all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 3/4 c. whole milk
  • 1 egg
  • 1 tbsp. mayonnaise
  • 2 tbsp. honey
  • 1 apple, peeled, cored, and grated
  • Butter and maple syrup, for serving

Instructions

  • Cook sausage according to package directions.  Cut into 1/2-inch pieces.  Set aside until ready to use.
  • In a large bowl, stir together flour, baking powder, baking soda, salt, and cinnamon.
  • In a small bowl, beat together milk, egg, mayonnaise, and honey until combined.  Add wet ingredients to dry and gently mix together.  Add sausage and apples and gently stir.
  • Heat a large pan or griddle on medium heat.  Add 1/4 to 1/3 cup of batter to pan/griddle and cook until bubbles start to form on the sides (about 1 to 2 minutes) before flipping.  Cook until bottom is lightly golden brown.  Repeat with remaining batter until done.
  • Serve immediately with butter and maple syrup

Notes

  • The original recipe listed either 1 tbsp. butter or mayonnaise for the pancake mix.  Somehow I managed to use all of our butter over the weekend, so I had to use mayo.  But as long as my hubby never finds out, I'll be doing this from now on!
