Cinnamon Oat Scones

Okay. So…

I got a little cocky in my last post. Because right when I was feeling like “hey, I can do this three kid thing“, life kicked me swiftly in the a**. For an example, I drafted this post over a month ago and am just now getting back to it.

So what’s been going on this past month? Well, not a whole lot. In total honesty, I feel like I’ve barely been getting by day to day. Trying to navigate life with three littles (three and under) has been as hard as I thought it would be, if not harder. Simply getting three kids out the door by myself to get one to school on time is an absolute win for me at this point. If that’s any indication as to how life has been lately. But I know this is only a phase and life won’t be like this forever. A ridiculously tired phase, but a phase nonetheless. And like many say, one day I’ll look back and miss these days. But until then, all I’m really missing is one full night of sleep!

But enough of my complaining. My family is healthy, I’ve never felt more grateful, and I wouldn’t trade this life for anything. Even for more sleep 🤪 But to keep my (sleepless) sanity, I’ve definitely turned to the kitchen for some pick me ups. Like these Cinnamon Oat Scones. Because who doesn’t want to wake up to a delicious piece of bready goodness slathered in a sweet, simple glaze? With a piping hot cup of coffee in the other hand, I couldn’t think of a more perfect morning.

Since life has been a little hectic, I’ve gravitated towards the quick and easy. And it really doesn’t get much simpler than a scone. Essentially a one bowl recipe with a little mixing, shaping, baking, and you have a beautiful piece of pastry heaven.

Like most scones, this breakfast treat is subtly sweet. With a not-so-subtle bangin’ flavor of cinnamon. As in, there will be no question what flavor of scone you’re eating. And to finish it off, a simple glaze is drizzled over top to bring this breakfast goody all together.

Now that I’ve learned my lesson, I won’t make any more blogging promises. Food blogging as well as sharing snippets of our life is something I love to do, I’m just trying to get back to a place where I don’t fall asleep while writing said posts. So bear with me as I get my sh*t together. I (semi) promise I will. At some point…

Cinnamon Oat Scones

A bursting-with-cinnamon scone finished with a simple, sweet glaze. A perfect treat to get your morning started!

Equipment

  • Pastry blender

Ingredients
  

Cinnamon Scones

  • 1-3/4 c. flour
  • 1/2 c. old fashioned oats
  • 3 tbsp. light brown sugar, packed
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tbsp. ground cinnamon
  • 1/2 c. unsalted butter, cold and cut into 1/2-inch cubes
  • 1/2 c. buttermilk
  • 1/2 tsp. vanilla extract or vanilla bean paste

Glaze

  • 1/2 c. powdered sugar
  • 1 to 2 tbsp. milk

Instructions
 

  • Heat oven to 400ºF. Line a baking sheet with parchment paper and set aside until ready to use.
  • In a large bowl, stir together flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon. Add butter and using a pastry blender or your fingertips, mix butter and flour together until butter is pea-sized.
  • Add buttermilk and vanilla extract and stir just until combined.
  • Gather dough together and transfer to baking sheet. Gently pat the dough into a disc, about 7 inches in diameter. Cut into 6 wedges and separte each so they're about 1 inch apart.
  • Bake 15 to 20 minutes or until golden brown. Cool completely on wire rack.
  • Meanwhile, for the glaze, stir together powdered sugar and 1 tablespoon of milk. Add additonal milk until the glaze is at desired consistency. Drizzle over scones before serving.
