Cinnamon Oat Scones

Ingredients
  

Cinnamon Scones

  • 1-3/4 c. flour
  • 1/2 c. old fashioned oats
  • 3 tbsp. light brown sugar, packed
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tbsp. ground cinnamon
  • 1/2 c. unsalted butter, cold and cut into 1/2-inch cubes
  • 1/2 c. buttermilk
  • 1/2 tsp. vanilla extract or vanilla bean paste

Glaze

  • 1/2 c. powdered sugar
  • 1 to 2 tbsp. milk

Instructions
 

  • Heat oven to 400ºF. Line a baking sheet with parchment paper and set aside until ready to use.
  • In a large bowl, stir together flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon. Add butter and using a pastry blender or your fingertips, mix butter and flour together until butter is pea-sized.
  • Add buttermilk and vanilla extract and stir just until combined.
  • Gather dough together and transfer to baking sheet. Gently pat the dough into a disc, about 7 inches in diameter. Cut into 6 wedges and separte each so they're about 1 inch apart.
  • Bake 15 to 20 minutes or until golden brown. Cool completely on wire rack.
  • Meanwhile, for the glaze, stir together powdered sugar and 1 tablespoon of milk. Add additonal milk until the glaze is at desired consistency. Drizzle over scones before serving.
