Tomato, Cucumber, and Feta Salad

A quick and easy side dish filled with juicy tomatoes, crunchy cucumbers, and creamy feta!

Ingredients
  

  • 2 beefsteak tomatoes, cut into 1-inch chunks
  • 1 English cucumber, halved and sliced
  • 1/2 red onion, sliced
  • Olive oil
  • Salt and pepper
  • 1/2 c. Feta cheese, crumbled

Instructions
 

  • Add tomatoes, cucumbers, and red onion in a large bowl.  
  • Drizzle olive oil and add salt and pepper, to taste.  Toss to thoroughly coat all of the produce. 
  • Finish with Feta cheese sprinkled over top.  Refrigerate until ready to serve. 

Notes

  • Since the produce is the true star of this dish, make sure to get quality veggies.  I promise it makes a difference!
  • I love this dish thrown together shortly before you're ready to eat your meal.  Let the dish chill in the fridge for 30 minutes to 1 hour but that's about all the prep time you need.
