HTH Monthly Baking Challenge: Soft Chocolate Chip Cookies

Feels like ages since I last posted a recipe. Life has been crazy lately but stick with me. With three littles at home, I can’t promise a lot. But I’m working on posting a little more consistently. And by more consistently, I mean more than once a month 🥴

Anywho, pregnancy is a crazy thing. Especially during the last trimester, I felt like the energy was sucked out of me. Baking always sounded like a chore (crazy, right?!), hence the little to no recipes going on around here. And you may (or may not) have noticed that I skipped last months baking challenge because the pregnancy struggle was real. But now that our little Cami is here, regardless of the sleep I’m (not) getting, I can feel my energy slowly coming back. My motivation to create in the kitchen is finally resurfacing and I’m so relieved to start feeling a little more like myself again.

So, here we are guys! Back to HTH’s monthly challenge and I’m so glad I carved out some time to make these ridiculously addicting Soft Chocolate Chip Cookies.

If you’re a crispy cookie fan, this recipe is not for you. But…if you find fluffy, just-thick-enough, buttery, chocolate chunk cookies more to your liking then do not pass up this post. I’ve been searching for the recipe that produces a truly soft, tender cookie and with a couple of helpful tips and unique ingredients, I’ve finally found it!

I’m throwing our family under the (chunky) bus, but this batch of cookies didn’t last 24 hours in our house. I actually had to hide a plate of them to give myself enough time to snap pictures for this post. And I’ve made quite a few chocolate chip cookie recipes over the years but none of them disappeared as fast as these!
