It’s amazing how quickly a month passes by. But then again, between a toddler, baby, and (nearly) 7 months prego, I guess it really isn’t. But that’s why I love being a part of a “challenge.” I love the commitment, and that even when I feel like I have a million other things to do, I’ll make myself set aside time for…myself. And to do something that I really enjoy. Something that 100% gets put on the back burner. And lets be real, everyone benefits in our household when I whip out the baking sheets!
So this months baking challenge over at Handle the Heat (HTH) was fairly straightforward, just some good ol’ fashioned Peanut Butter Chocolate Chip Cookies. But done exquisitely well. So well, that this will absolutely be a go-to recipe when I need a batch of tried and true cookies. A mix of soft, yet chewy, with just the right amount of girth, packed with chocolate chips and peanut butter. A classic flavor combo in a recipe that is truly a gem!
What was so intriguing about this recipe is that you literally don’t need a mixer. I’ll be honest, I thought I was misreading the directions at first and I still don’t actually know if I should have been using a mixer or not…but the cookies turned out perfectly so I don’t think I did? Right? All I needed were two bowls, a spatula, and some veteran mixing motions to get a masterpiece of a cookie.
