HTH Monthly Baking Challenge: Lemon Cupcakes

Hi everyone!

So, I’m going to get right into this post because I’m super pumped about joining this challenge! If you followed P&P 1.0 (RIP, still not over it), you may remember that I participated in a couple of monthly baking challenges, such as the Secret Recipe Club. But since I took a little blogging hiatus, so did all of my “memberships” in said clubs. However, even during my little break, I kept updated on the many blogs I follow and tagged Handle the Heat‘s Monthly Baking Challenge as one I’d have to join when the time was right.

And the time is now, my friends.

Just kidding. That was very dramatic.

Nevertheless, I’m incredibly excited to join a blogging community once again, discover new blogs, and of course, try out some fantastic new recipes! So let’s get to it.

The challenge itself is rather straight forward: bake a batch of the current months recipe, share a photo by the end of the month, and (maybe) win the giveaway! But although the giveaways are legit, I’m more excited to bake outside of my comfort zone a little and hopefully make some new (blogger) friends along the way.

For April’s Monthly Baking Challenge, as you may have guessed, we were asked to test our hand at homemade Lemon Cupcakes. I last made Lemon Cupcakes years ago when we lived in Omaha, so I was anxious to try this perfectly Spring recipe. And not shockingly, I wasn’t disappointed!

What I LOVE about this recipe is the use of the entire lemon. Both lemon zest and fresh lemon juice are seeping out of every element in this cupcake and they make the difference. The cake itself isn’t overwhelming lemony, but its light, fluffy, and subtly sweet. Plus I love the little specks of lemon zest studded throughout. But what really takes the cake (see what I did there), is the Lemon Frosting. Bursting with citrus flavor, this frosting easily jumped into my top three frostings I’ve ever made. And although I’m usually one to go the chocolate route, this frosting may have converted me. Just trust me on this one, it’s a must try.

All in all, I couldn’t be happier with my first Monthly Baking Challenge! This recipe is one I’ll keep in my repertoire and I’m so anxious to see every one else’s results.
