This Chicken Parmesan Meatballs recipe is insanely easy yet packed with all the flavor. A simple mix of ingredients, meatball shaping, and a jar of your favorite marinara sauce has you on your way to the most delicious, belly filling meal that’s sure to please. This one really is that simple and it’s a personal favorite around our household!
I especially love to make this recipe when we have guests in town because it takes no time at all, so I’m not slaving over the stove all night. Although it tastes like I did just that. The mix of cheese, fresh herbs, and more cheese really does it for me. And everyone else. I promise.
Chicken Parmesan Meatballs
Equipment
- Large bowl
- 13×9" baking pan
Ingredients
- 1 to 2 (24 oz. each) jars marinara sauce
- 1 lbs. ground chicken
- 1 egg, lightly beaten
- 1 tbsp. extra virgin olive oil
- 2 garlic cloves, minced
- 1/2 c. parmesan cheese, grated
- 1/4 c. seasoned bread crumbs
- 3 tbsp. fresh herbs, like basil, parsley, thyme, oregano
- 1 tsp. dried basil
- 1 tsp. dried parsley
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. grated mozzarella or provolone cheese
- Fresh basil, chopped, for topping
- 1 lbs. spaghetti, prepared according to package
Instructions
- Heat oven to 375ºF. Spray a 13×9-inch baking dish with nonstick spray. Pour half of one jar of marinara sauce into pan and spread evenly; set aside until ready to use.
- In a large bowl, combine chicken, egg, olive oil, garlic, parmesan, bread crumbs, herbs (fresh and dried), salt, and pepper. Gently combine the mixture until ingredients are evenly distributed (but don't overmix!). Roll the mixture into about 1-inch meatballs in diameter and place evenly in prepared baking dish.
- Cover each meatball with more sauce from the jar and top with cheese. Bake 25 to 30 minutes or until the center of the meatballs reach 165ºF.
- When the meatballs are done, remove from oven. Top with fresh basil and serve over cooked spaghetti.
Notes
- Make sure to use your best sauce! This one is my favorite, you can get it at most grocery stores or Target!
