Not gonna lie, this seasons recipes have been so incredibly random. I’m typically a very seasonal baker (i.e., all things pumpkin in Fall) but I’m rolling with it. We tried out some really amazing recipes this past Summer that I just need to get out to you. Like these Brownie Cookie Sandwiches.
My son actually picked this recipe out from my Pinterest board, one that I’ve had for a very long time and always passed over it. But kids always know best, right? And he definitely knew best.
These are easily the most chewy, rich, chocolatey brownies I’ve ever had. Just in cookie form. Paired with a thick layer of subtly sweet cream cheese frosting? Yes, please. A million times over.
These cookie sandwiches didn’t last long around our house but that was really no surprise. There’s just something so perfectly addicting about them that had both the littles and adults sneakin’ these out from under my nose 😉

Brownie Cookie Sandwiches

Brownie Cookies
- 1-1/2 c. bittersweet chocolate, roughly chopped
- 2 tbsp. unsalted butter
- 1/4 c. plus 1 tbsp. flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. light brown sugar, firmly packed
- 2 eggs
- 1 tsp. vanilla extract
- 1/4 c. semisweet chocolate chips
Cream Cheese Filling
- 2 oz. cream cheese, at room temperature
- 2-1/2 tbsp. unsalted butter, softened
- 1/4 tsp. vanilla extract
- 1 to 1-1/2 c. powdered sugar
Instructions
Brownie Cookies
- Place chopped chocolate and butter in a microwave-safe bowl and in the microwave in 30-second increments until the butter and chocolate has melted when stirred. Stir until smooth. Set aside to cool slightly.
- In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, using a hand mixer on medium speed, beat brown sugar and eggs until thoroughly combined. Gradually add the chocolate mixture and mix well. Mix in vanilla extract until smooth and combined.
- Reduce mixer speed to low and gradually add the flour mixture. Mix just until combined. Stir in chocolate chips. Refrigerate dough for 15 minutes to let it firm up.
- Heat oven to 350ºF. Line baking sheets with parchment paper or spray with cooking spray. Using a tablespoonful of dough at a time, roll the dough into balls and place on the prepared pans. Flatten the top of each cookie slightly.
- Bake 8 to 11 minutes or until the edges appear done but the centers are still soft. Cool on pans for 10 minutes, then transfer the cookies to a wire rack to cool completely.
Cream Cheese Filling
- While the cookies are cooling, prepare the filling. In a small bowl, using a hand mixer on medium speed, beat cream cheese, butter, and vanilla extract until thoroughly combined and smooth. Gradually add 1 cup powdered sugar and mix well. Add more sugar to reach the desired consistency and flavor.
- Spread the frosting on the bottoms of half of the cookies. Top with remaining cookies to form cookie sandwiches. Serve and enjoy!
