Avocado Chicken Salad Sandwich

Sure has been a minute since my last recipe post. But I have some really good ones from just this Summer, so here’s the beginning of my efforts to crank out some food posts!

Chicken Salad Sandwich

I’ll start with a tried and true recipe: Avocado Chicken Salad Sandwiches. A sandwich I’ve been making for a couple of years now and have adapted over time. It’s a true family favorite, a simple dish that my even my littles ask me to make. And it’s beyond easy to whip together making it the perfect entree on those busy weeknights.

I typically serve this Avocado Chicken Salad on a toasted English muffin, with cheese, crunchy lettuce and pickles, and a juicy slice of tomato. But if you’re looking for other options, this chicken salad would be SO good on top of a bed of lettuce, too! I also love how adaptable this salad is. Don’t like red onion? Leave them out. Want to add shredded cheese instead? No ones stopping you! Dice up those pickles and throw them in. Whatever your family loves is what this salad should become. Happy experimenting!

A quick, delicious, and healthier version of chicken salad. Perfect for those busy weeknights or an easy weekend lunch!

Ingredients
  

  • 1 (ripe) avocado, sliced
  • 4 tsp. lemon juice
  • 4 scant tbsp. plain yogurt,
  • 4 scant tbsp. mayonnaise
  • 1 rotisserie chicken, shredded (about 4 cups)
  • 1/2 red onion, diced
  • Salt and pepper, to taste
  • 6 english muffins, sliced

Sandwich Toppings

  • Cheese, sliced
  • Pickles, sliced
  • Lettuce
  • Tomatoes, sliced

Instructions
 

  • In a large bowl, mash the avocado with lemon juice, yogurt, and mayonnaise until mostly smooth (chunks are perfectly okay!).
  • Add chicken and red onion, stirring until thoroughly coated. Add salt and pepper to taste. The salad is best if it can sit in the refrigerator for a bit but is still delicious served immediately on top of a toasted English muffin, bread, or lettuce. Don't forget to add your favorite toppings!

Notes

  • This is a very adaptable recipe.  A “throw in what you like or take out what you don’t” type!  Sometimes I’ll added about 1 cup of shredded cheese or dice up pickles and throw those in.  This sandwich is your oyster!
  • You can use all yogurt to make this salad very healthy, but I personally love the flavor a little mayo adds!
